Intervals cocktail bar shakes up Hong Kong airport

Time flies with a cocktail or two.


A new cocktail bar is set to open at Hong Kong airport this month.


Intervals is a collaborative project, developed by Plaza Premium Group and Victoria Chow, founder of former Hong Kong cocktail lounge, The Woods.


A sophisticated cocktail menu offers a series of miniature ‘sips’ for time-pressed travellers, with drinks tailored for a short 15 minute experience to longer 30- and 45-minute stop-offs. The 15-minute sip, or ‘flight of cocktails’, includes To Dream made with tequila, chamomile-vanilla tea, bianco vermouth and sparkling wine, along with To Wake, a blend of nitro-brewed coffee, cognac and tofu-hazelnut ice cream.


Longer flight of cocktails includes the 30-minute, four-cocktail experience and the 45-minute, six-cocktail sip.


Non-alcoholic options include To Spring containing garden-y Seedlip, cucumbers and non-alcoholic vermouth, To Summer with coconut and watermelon and To Autumn which is mixed with zero-alcohol red wine, blackberry, lemon and plum bitters.


Intervals will also be serving up a selection of ‘pinchos’, or tapas-style bar snacks, from a roving trolley. The ever-rotating menu of light bites includes Hong Kong prawn toast, fig and goat cheese or rye and mini tacos with turkey meatballs.


And for travellers who are seriously short on time, Intervals will also be offering a food and cocktail takeaway option.


Plaza Premium’s Mei Mei Song who spearheaded the project for the group says the bar was created to celebrate the group’s 25th anniversary as well as offering an airport experience for travellers to look forward to.


“Airports have transformed their retail and meal offerings tremendously over the years - and yet a sophisticated cocktail bar that is a destination in and of itself has not yet been done,” she said. “This project takes a different spin from anything we’ve done before.”


Intervals is due to open later this month at Hong Kong International Airport’s Skybridge, with a soft opening on June 14. During the soft opening period it will open from 9am to 6pm with extended opening hours of 7 to 1am from July 26.
